Limoncello Recipe

Limoncello [Lee-mon-che-llo] is a lemon liqueur which originates from Southern Italy.  It is made from lemon rinds (traditionally from the Sorrento lemon, though most lemons will produce good limoncello), alcohol, water and sugar.  It is bright yellow in colour, sweet and lemony, but not sour since it contains no lemon juice.

What you'll need:

  • 10 Lemon Zests
  • 1 Still Spirits Liqueur Base "C"
  • 750ml Still Spirits Vodka or Still Spirits Turbo spirit (40% strength)
  • Water to top up to 1.125 litres

 

 

Instructions: 

  1. Wash your lemons with a brush and hot water and then zest the lemons (remove the rind.  The rind is the lemon peel ie the yellow part).  You are aiming to remove all the yellow parts of the peel, but you do not want to include any of the white pith underneath.  It's the oils in the peel that gives the fragrant flavour.
  2. Combine lemon zests with half of the alcohol. We recommend using a 5 Litre (1 US Gallon) Glass Jar with Flip Top.  Leave for 20 days.
  3. After this time, combine the rest of the alcohol with the Liqueur Base Pack in another container.  Stir or shake to make sure the Liqueur Base Pack is completely dissolved & mixed.  Add this mixture to the Glass Jar and leave for a further 20 days.
  4. After this time, strain out the solids and bottle the finished liqueur into an 1125ml (40oz) bottle. Top up with water as required.

Best served very cold in the traditional way - Ideally stored in the freezer.
